Almond Joy Breakfast Pudding
I used to tell my children that candy is good but it is not for breakfast. This breakfast pudding tastes as good as the candy bar but with far less sugar or complaints from Momma :) And it is decadent enough to be served as a dessert too!

Recipe serves 2
Almond Joy Breakfast Pudding
2 cups unsweetened coconut milk
6 T avocado, mashed
1/2 cup spinach
2 T chia seeds
2 T unsalted almond butter
1 t vanilla extract
1/4 cup Lily’s dark chocolate baking chips
1/4 cup slivered unsalted almonds, dry roasted
1/4 cup unsweetened coconut flakes
Directions
In a medium bowl, mix chia seeds with 1 cup of unsweetened coconut milk and 1 t of vanilla extract.
Add remaining coconut milk, avocado, spinach, whey concentrate, and almond butter to your high speed blender smoothie setting. (I use the Instant Pot Ace Cold and Hot blender. You can find it here.)
Add 1/2 of the chia mixture to 2 ramekins or bowls.
Pour 1/2 of the chocolate smoothie over the top of the chia mixture
Garnish each ramekin or bowl with the chocolate chips, almonds, and coconut flakes.
Serve immediately or cooled.
