BLT Salad with Ranch Dressing
Who doesn’t love a bacon, lettuce, tomato, cucumber, spinach, onion, black olive, avocado sandwich that you eat with a fork?

Recipe serves 2
Bacon Lettuce and Tomato Salad with Ranch Dressing
3 cups of your favorite lettuce
1/2 cup baby spinach leaves
2 eggs, boiled to your liking
3 strips bacon, cooked and chopped
1/4 cup grated cheese
1/4 cup cherry tomatoes, halved
1/4 cup sliced cucumber, peeled if not organic
2 T chopped red onion
2 T black olives, chopped
3 T carrots, grated
1 avocado, sliced
2 T Ranch dressing (I like the Panera Bread ranch dressing in the refrigerated produce section)
Seasoning to your liking - salt, pepper, dried dill, garlic, Italian seasoning
Directions
Toss the lettuce and spinach together and split between 2 bowls.
Layer on grated cheese and veggies. Add the chopped bacon, boiled eggs, and sliced avocados
Garnish each bowl with 1 T of ranch dressing, desired dry seasonings, and croutons.
